nitter.net/mysticryuujin/st… is a an excellent way to make upgrades smooth: statically peer at least two nodes and have these subscribe to all subnets!
My Setup includes 3 Intel NUCs 2 Bigger NUCs, 1 Smaller NUC 2 NUCs: Beacon Nodes subscribed to all subnets. 1 Geth, 1 Nethermind. 1 NUC: Beacon Node & Validator. Beacon Nodes are all static peers of each other + 50 Peers and I use all available Lighthouse fallback functions.

Above all, this happens during upgrades - if you had a stable set of good peers you were connected to, they will most likely now give their peer slots to others - specially if _they_ had a low max peer count setting - the best thing you can do in this situation is to check..
